Glazed beets

8-10 medium beets 1 cup orange juice 2 tablespoons arrowroot 1/4 teaspoon salt 2 tablespoons lemon juice 1 teaspoon date butter or honey
1. Wash whole beets and boil until tender. 2. Drain and rinse with cold water. 3. Slip off outer layer and trim root and top. 4. Dice or slice as desired. 5. Mix juice, arrowroot and salt in saucepan and simmer until clear and thick, stirring often. 6. Remove fromheat and stir in lemon juice, date butter (or honey) and beets. 7. Serve hot.
