Lentil timbales

1/4 c. chopped onion 1/2 c. chopped celery 1 clove minced garlic 2 c. cooked lentils 2 c. seasoned bread crumbs 1/2 c. chopped walnut or pecans
1. Steam the onion, the celery and the garlic in a few tablespoons of water until tender 2. Add to above the lentils, the bread crumbs, and the nuts 3. Let stand 5 minutes, add nut milk or water to obtain consistency good for forming patties. 4. Form into oblong timbales and roll in bread crumbs. 5. Bake 20 minutes at 350°F 6. Turn and bake 20 more minutes
Good with tomato sauce, gravy, or plain. Excellentin sandwiches with lettuce or tomato.
